Wow. I don’t know what to say after reading the comments on yesterday’s post. I was only hoping to get you guys talking about CrossFit and maybe share a story like, “I used to be a giant weenie, and now I’m a less giant weenie.” Or maybe tell about an aspect of your life that improved which isn’t obviously related to the gym, like, “Now that I do CrossFit my dog doesn’t shit in the living room anymore.” I certainly didn’t expect the barrage of compliments that came through.

So now it’s my turn. I am so very grateful for all of you, and I consider it the honor of honors that you ask me to be your guide to a stronger and healthier life. I promise to continue to do my very best to help you become your very best, to see you as what you are capable of becoming, to push you beyond your comfortable level of discomfort, and to help remove the word “can’t” from your vocabulary – even if I have to beat it out of you!

Your words of gratitude inspire me as a human being (and as your coach), and help me to further appreciate the depth and importance of what I do. I’ve felt so blessed since we opened the gym around 18 months ago because I never have to wonder if I’m on the right path in life, and because I get to do what I truly love and share it with my friends everyday.

In response to all your thanks, I say you’re very welcome. Words cannot possibly express how happy it makes me to be able to accompany you all on this perpetual journey of fitness. I know I speak for Danielle, Jackson, Sara, and Rick when I say thank YOU for making CrossFit Montgomery County such a great place to be.

And yes, today’s WOD is still going to kick your ass.

    Okay, now that we’re done with the touchy feely stuff, back to recipes:

    Chipotle Lime Tuna Steaks

    2 Tuna Steaks
    Ground chipotle pepper (McCormick’s has a good one)
    Lime juice
    Garlic Powder
    Olive oil

    Rub olive oil on both sides of the tuna steaks. Pour on some lime juice. Sprinkle with chipotle pepper and garlic powder. Grill tuna for about 3 minutes on each side (rare) or 6 minutes on each side (Medium rare).

    Baked apples with cinnamon and butter

    * 4 apples (tart apples are very good for this)
    * 4 tbsp grass-fed butter (or ghee)
    * 4 tsp cinnamon
    * Optionally, a bit of fresh nutmeg


    1. Preheat your oven to 350 F.
    2. Core the apples making sure not to go all the way through and to leave the bottom on the apples.
    3. Stuff 1 tbsp of butter inside each apple.
    4. Sprinkle with the cinnamon and nutmeg.
    5. Bake for about 12 to 18 minutes, until the apples are soft.
    6. Serve and enjoy!

    *Tropical Green Smoothie* (perfect celebration drink for upcoming st. patty’s day and the end of the paleo challenge!!)

    2 big handfuls of fresh raw spinach
    1 cup frozen mango chunks
    1 banana
    1 cup of water

    Combine all ingredients in a blender and blend until smooth.

    Okay… This question is directed at everyone:

    I eat several egg whites every morning minus the yokes because they seemed to give me heart-burn. Since I recently introduced egg white protein powder into my diet as a post-workout drink, the side-effect have been horrible (i.e. my stomach hates it)… When I woke up this morning and ate my eggs after a night of fighting the egg protein powder, my esophagus tightened up for about 4 hours. It appears that the paleo diet helped me identify an intolerance (or possibly an allergy), but I’d like to think this is temporary. I’ve never had a similar experience with Whey or Soy protein powders. While Hemp protein would do the trick, it isn’t necessarily the most neutrally flavored or inexpensive protein. Chef mentioned that there are some benefits to milk-based products, which might be the answer following the paleo challenge. Oh, and I’m lactose intolerant. Nice. Any feedback would be appreciated.

    The BEST no salt seasoning.

    Seriously, this stuff tastes so good its almost shocking. The Kirkland brand Organic No Salt seasoning is far far better than anything I have gotten at Penzys or the Mrs. Dash brand. Its only available at costco, but if anyone wants some I go pretty often so let me know and I can pick some up for you.
